I think he missed me cause I was in Chicago for 4 days! :D

All I did was warm tortillas in the oven, add shredded chicken, cilantro, shredded colby, guacamole, salsa, and a bit of love. ;) Then I made a simple salad with goat cheese, almonds, grapes, lettuce, and croutons.

Maybe I should re-think all those fancy dinners that take more than 10 minutes to cook. :D
